BUNZZ Bow-Tie Namakeen

Preparation
Step 1: Knead a stiff dough using water. Rest the dough for 20 minutes. Prepare the Satta by mixing melted ghee and rice flour. Note not to keep the dough sodt, else the end product will not be good.
Step 2 : Make small portions of the dough. Using dry maida roll out 3 thin rotis.
Step 3 : The rotis should be very thin. Place 1 roti and apply satta. Cover with 2nd roti and apply satta again. Place the last roti.
Step 4 : Roll out the rotis as thin as possible.
Step 5 : Cut into a big square and give cuts as shown. Make a small slit in the centre of each strip. Heat oil for deep fry.
Step 6 : SHAPING OF BOW-TIE - Now comes the interesting part to shape the namakeen. Take one namkeen strip and insert one end through the middle small slit. On frying the layers will separate but will be held together at the centre. This gives it the BOW-TIE shape. Ready some Bow-Ties and fry in medium hot oil on slow flame.
Step 7 : Do not touch immediately. Turn gently. Fry on slow gas until crispy and creamish golden in colour.
Step 8 : Drain off the excess oil. Mix sanchad and chilli powder and prepare the sprinkling masala.
Step 9 : Keep on a jaali strainer for a while.
Step 10 : Transfer the BOW-TIE NAMKEEN onto a plate. Sprinkle little masala to enhance the taste.
Cool completely and store in airtight container for 15 days.
